INGREDIENTS:
- 2 cups cooked rice
- 4 eggs (2+2 for coating)
- Salt and black pepper to taste
- Parsley to taste
- 150 grams grated mozzarella/cheddar cheese
- Optional: 1-2 handfuls of grated salami/pepperoni or sausage
- 3 heaping tablespoons whole wheat flour
- 1/2 teaspoon baking powder
- Bread crumbs for coating
PROCEDURE:
- In a bowl, place the cooked rice and season it with salt and black pepper to taste. Add 2-3 eggs and chopped parsley. Mix well to combine.
- The quantity of eggs depends on their size, and when all the ingredients are added, you should have a compact mixture that can be easily shaped by hand.
- Add the grated mozzarella/cheddar cheese, grated salami/pepperoni or sausage, flour, and finally, baking powder. Mix/knead with your hands until you get a firm dough.
- Take a spoonful of the dough and, with moist hands, form small balls. Optionally, flatten the ball in your palm, place a small cube of cheese (or grated cheese), then close and reshape the ball.
- Alternatively, simply make small balls from the mixture, roll them in flour, then in beaten eggs, and finally in breadcrumbs. Fry them in hot oil until golden brown, and drain them on paper towels.
